Induction technology with Dual Max Power zone

The charm of the past lives again
Bertazzoni’s Heritage Series is inspired by the products created by the company at the beginning of the twentieth century, but enriched with contemporary technologies. In particular, the 60 cm F6011HERVPTAC oven is available in matt black or ivory with chrome or copper details. It has a 76-litre cavity and 11 functions for cooking at medium-low temperatures, with static or ventilated cooking, or for browning with the infrared grill. The appliance is controlled via the knobs and the TFT display, thanks to which it is also possible to manage the thermometric probe and the Bertazzoni Assistant which supports the user during the cooking process. The Total Steam function, on the other hand, allows to steam cook and the water tank can be removed and filled without having to interrupt the cooking program. A further strong point of the oven is the cleaning by pyrolysis, which allows to easily clean the appliance using heat, without the need for detergents. Finally, the door has a quadruple athermal glass which guarantees safety and efficiency.

Combined steam oven
For those who love contemporary style, there are several options that also integrate well into the kitchen of a mountain home. Among these, the ICBCSO30TE/S/TH combined steam oven from Wolf E transitional series (distributed in Italy by Frigo2000) allows you to use the benefits of steam for cooking. The product is characterized by a modern stainless steel finish with a tubular handle and an electronic display. It is 45 cm high and has an internal volume of 51 liters and 13 cooking functions, including Gourmet automatic steam with temperature and humidity sensor, Automatic delicate cooking at low temperature, Food warmer (80°C) and Degree-controlled steam cooking from 30°C to 100°C. Professional equipment
The 150 cm P15FSNE3/BUG cooking block is part of Ilve ‘s Nostalgie collection, which interprets tradition in a modern key. The Burgundy Red color and the brass finishes of the handles, knobs and frames create a retro effect, while the latest generation technologies are able to satisfy the needs of even the most demanding users. The product, in this configuration, features a gas hob with 7 burners (including a double crown burner and fish rack), Coupe de Feu and Fry Top plate. Miele introduced green aluminium in its production with the aim of reduce by 645 tonnes per year. Aluminium is strong but light-weight. These and other properties make this material an attractive proposition in a broad range of industrial applications. Alongside its use in the automotive sector, this metal also plays a key role in the production of domestic appliances. As Miele explained, «aluminium is energy-intensive in production. Hence the more energy is supplied by the sun, wind and water, the more the climate benefits. As part of a pilot project, Miele is now using primary aluminium in the manufacture of ovens produced exclusively using green electricity from hydropower. This way, Miele reduces its CO2 footprint by 645 tonnes a year and, in doing so, is making yet another contribution to greater sustainability in the supply chain».

In 2021 Miele introduced the use of low-CO2 steel to the production of ovens. «We are the first in our branch of industry to prove that CO2-reduced aluminium can be successfully used in ovens and help reduce the CO2 footprint – said Hans Krug, Senior Vice President Procurement -. The objective is to use climate-friendly aluminium on a broad front and thereby contribute towards a future-proof economy».

Initial use in oven production in the Westphalian town of Oelde. In a first stage, this year Miele will order around 150 tonnes of CO2-reduced aluminium for the production of trim. This represents an integral part of the ovens manufactured by Miele in the Westphalian town of Oelde. The aluminium is converted into an alloy in the supplier’s own foundry, further processed and then supplied to Miele in the form of finished components. The aluminium is poured on lines which use regenerative burners which utilise waste heat from the production process.

Atmos multifunction oven is one of the latest innovations by Fulgor Milano. It features 6 steam cooking modes, 11 programs and 9 special functions. The water tank has a capacity of 1.5 liters and the steam temperature is reached in less than 5 minutes. In addition, the oven guarantees an autonomy of over 3 hours for steam cooking at 100°C without having to top up the water. And when it is necessary to do so, this operation does not require opening the oven door. The appliance is also in A++ energy efficiency class and is equipped with touch controls and soft closing hinges. Finally, a further plus of Atmos is the Pizza function, thanks to which the oven reaches up to 290°C to ensure a perfect cooking.

New dimension for the steam oven
Thanks to its 90 cm wide x 45 cm high, it is possible to cook two dishes on the same shelf with V-Zug Combi Steamer V6000 Grand oven (distributed in Italy by Frigo2000). This product has a 68 liter stainless steel cooking compartment, double fan, climate sensors (temperature/humidity) and a customizable touch display (App or list style) with Circle Slider to set programs. The appliance allows steam cooking, sous vide, combined steam cooking and the regeneration of food already cooked through steam. In addition, the opening of the water tank door is automatic. Among the numerous technological pluses, this oven also includes Automatic Cooking (it does not require to set either temperature or time), the possibility of memorizing 50 programs, the thermometric probe with 3 detection points and the EasyCook function that allows you to have cooking suggestions also divided by “eating styles”. Finally, to offer guests a moment of well-being, the appliance has a Wellness program with which to heat the oshibori towels.

Intelligent Kitchen
The new iQ700 ovens by Siemens are a concentrate of technology, designed according to the Intelligent Kitchen concept promoted by the brand. These products, connected and enhanced by AI, are managed through a high resolution TFT-Touch display and can also be controlled via voice commands or remotely with the Home Connect app. Among the technologies and programs in the range, there are for example the fullSteam Plus function for cooking with steam, the browning sensor with which users can select the preferred browning level, the cookControl Pro function to choose the final touch in the cooking of each dish (for example fast, juicy or crunchy: the oven automatically applies the right settings and switches off when the dish is ready) and the bakingSensor Plus which measures the humidity level in the oven.

Sustainability and climate protection characterized the new products of Miele, on display at IFA 2022. A contribution towards reducing food waste comes in the form of new free-standing refrigerators from the K 4000 series with their innovative PerfectFresh Active system in which the combination of a temperature of around zero degrees with humidity and a fine mist of water keeps vegetables and fruit crisp and attractive for up to five times longer. In addition, further improved smart cooking assistants and recipe apps as well as intelligent energy management, ensure more sustainability in the household.

Miele is also expanding a steam cooking range of appliances. Among these, we can mention steam ovens which combine an oven or wall oven with first-class specifications with a fully-fledged steam cooker. Firstly, Miele will be presenting new models with top features, such as improved cleaning convenience. Secondly, there will be a new entry-line model series which will reduce the starting price in this sought-after product category by around one-third, making cooking with steam more accessible to a larger target audience.

Moreover, in the market for induction hobs with an integrated downdraught extractor, Miele presents new models which guarantee more efficient extraction than their predecessors – whilst at the same time being noticeably quieter. The four new model series originate at Miele’s Arnsberg, Bünde and Oelde production plants. All models have been tested to last 20 years. Automatic programs, pre-set recipes and tools inspired by the professional world allow the user to cook by letting the oven guide in order to avoid mistakes. Selecting the settings is easy thanks to the electronic displays: each meat cut is cooked in the most correct way and with the desired degree of cooking.

Right program, right heat
In a multifunction oven, the availability of a series of cooking programs means that, simply by choosing the desired one, the corresponding heating elements are automatically activated to obtain the most suitable type of heat. The FE9VV092EGD model of La Cottura by Italian Design, for example, within its 9 functions has3 programs in which the rotisserie is combined with other oven components: rotisserie+grill (for delicate grilling and perfect browning ), rotisserie+upper heating element+grill (for a quick and deep grilling and for roasting meats in general), rotisserie+infrared grill+upper resistance+ventilated cooking to ensure uniform circulation of hot air (the latter mode is particularly suitable when grilling on the upper level and cooking baked potatoes on the lower level). Combining heat and humidity

From surfaces cleaning to food cooking: steam allows a variety of uses, ensuring hygiene and health. It also brings added value to household appliances, such as ovens and dishwashers, which can thus offer innovative functions.

In the kitchen steam has many uses, both in cooking food and in cleaning surfaces and dishes. While the effective sanitizing properties of steam have been known for some time also in the domestic channel, its use for cooking food in a light and healthy way, instead, is more recent. There are also models that allow Sous-vide cooking and automatic menu cooking. In fact, it is possible to combine up to three automatic programs to cook different dishes. Temperature, duration and sequence are automatically determined and the user must simply introduces the ingredients into the oven at the right time and in the right order. Also with regard to free-standing microwave ovens, among the most innovative products there are appliances equipped with a special function for steam cooking. Functioning is simple: simply pour the water into the supplied steamer, set the type of food and its weight and the oven will optimize the cooking time.

Russell Hobbs’ MaxiCook steamer allows to prepare low-fat meals. It has 3 trays designed to cook different foods at the same time: the total capacity is 10.5 liters and it is possible to cook not only vegetables but also chicken breasts or fish fillets etc. In addition, the trays are dishwasher safe and BPA free. If in the field of large appliances there are several options that consumer can choose for steam cooking, there is no shortage of proposals also in the context small domestic appliances. It is in fact possible to choose steam generators that allow to cook even more foods at the same time thanks to the presence of stackable trays. The result is a formal convergence towards a contemporary finish with a timeless matrix, which is a candidate to become the 2021 must have color: matte black. Black, in fact, a refined shade by definition, has become the trendy nuance also in the kitchen environment, characterizing all its elements, generating residential micro-architectures that play with the alternation of dark colors and lighter shades.

The double Lcd display, with central slider, guides the creation of dishes from the moment the hob is switched on, allowing to easily select the cooking zone to be used and the power to be set from 1 to 18 (with indication of the type of cooking for which the selected power is recommended). To speed up times, up to 4 Cookassist cooking can be started at the same time or combined with traditional cooking.
The color palette of the KitchenAid planetary mixer is very rich. Implemented every year by new and special colors, it also includes a beautiful matt black cast iron. Protagonist and real star of any kitchen, it does not need any introduction: this model, Artisan Food Processor with a 4.8 liter moving engine body is equipped with a stainless steel bowl and allows to work up to 1 kg of common flour and 12 egg whites (medium). The new edition of CES, is taking place as a digital event. It started on January 6 and will end on January 9, 2021.
